BLENDER BANANA BREAD
The quickest and easiest way to turn overripe ugly looking bananas into banana bread. Everything gets mixed in a blender, saving time and washing up!

Ingredients
3 medium extremely overripe bananas
3 eggs
150g unsalted butter, softened
1 cup brown sugar
1/3 cup treacle
1 tsp vanilla extract
1 tsp ground cinnamon
Pinch of salt
2 1/2 cups self-raising flour, sifted
Method
Step 1. Preheat the oven to 160C. Grease and line a loaf tin with baking paper.
Step 2. Place all of the ingredients, except for the flour, into the blender jug and blitz until smooth.
Step 3. Add the flour and mix briefly, scraping down the sides if necessary between mixes until a smooth batter forms.
Step 4. Pour the batter into the loaf tin and bake for 55-60 minutes or until cooked through and golden on top. Let it cool in the tin for around 10 minutes. Serve warm or cold with butter.
Notes
Make sure the bananas are very overripe and soft. The more overripe, the sweeter and more moist the outcome.
Slice and freeze any leftovers to keep for easy snacks or school lunches.
I you asked me if I wanted a carrot cake, I would probably say; “no thanks”
But if you asked my wife the same question, she would give a resounding; “yes please!”
So that is why I am making this cake and sharing this recipe, to remind me to make my wife more carrot cakes and make the most of the million carrots we always seem to have in the fridge!
