SPICY PINAPPLE MARAGARITA
I created this margie with the legendary Aussie cricketer Adam Gilchrist using his epic tequila El* Arquero Blanco (they also have a Reposado in the range).
This was paired with my Chicken Al Pastor Tacos and hence why I wanted to use pineapple and spice to pair nicely with the tacos! A delicious drink for those that like a little kick, perfect for summer days and fun to make for friends with only a few simple ingredients!
45ml El*Arquero Blanco
15mL Cointreau
20ml pineapple juice
20ml fresh lime juice
5mL jalapeno sugar syrup
Ice
Garnish
Tajin + Salt Rim
Step 1. Mix equal parts Tajín and salt on a small plate. Run a lime wedge around the rim of a rocks glass (or margarita glass), then dip/roll the rim in the Tajín and salt mixture.
Step 2. Add the tequila, Cointreau, pineapple juice, fresh lime juice, and jalapeño sugar syrup to a cocktail shaker. Fill the shaker with ice and shake hard for 10–15 seconds until well-chilled.
Step 3. Fill the prepared glass with fresh ice. Strain the shaken cocktail into the glass and garnish with a pineapple wedge and a thin jalapeño disk. Serve immediately.

I don’t even know why I am putting this cocktail recipe on my website, it was honestly the worst thing I think I have ever drunk. That’s not to say others might not like it, but just my opinion.
