SPICY NDUJA VODKA PASTA
Nduja is a dangerously addictive, spreadable firecracker of Calabrian pork and chilies that melts into a smoky, spicy sauce all over anything it touches. In this case, it is the perfect addition to a classic vodka pasta (which is one of the simplist and most delicious pastas you can make!)
1 packet Rigatoni, cooked in salted boiling water
1 tbs extra virgin olive oil
1 brown onion, diced
3 the Nduja
1 tbs tomato paste
1/4 cup vodka
1 cup pouring / thickened cream
Handful of basil leaves + extra to garnish
Salt, to season
Parmesan, to serve
Step 1. Over medium heat, saute onion in olive oil until softened and aromatic. Add Nduja and using a wooden spoon breakdown until combined with the onion. Add tomato paste and stir to combine.
Step 2. Increase heat slightly and, removing pan from heat pour in vodka, next carefully flambe to burn of alcohol. Reduce heat and add cream and cooked pasta along with basil and salt to season. Toss well to incorporate, if needed use pasta water to loosen sauce.
Step 3. Serve to a large platter garnished with extra basil and grated parmesan.
