PEA & PROSCIUTTO LASAGNE PASTA
Make a tasty pasta dish for lunch or dinner with those leftover lasagne sheets that we all have sitting in the pantry.

Ingredients
4 leftover dry lasagne sheets, cracked into thick strips
1 clove garlic, finely sliced
6 slices prosciutto, roughly torn
1/2 cup frozen peas
4 fresh sage leaves, roughly chopped
Small handful fresh basil
Parmesan
Method
Step 1. Cook the broken up lasagne sheets until just tender, reserving some of the cooking water.
Step 2. Heat a tablespoon of olive oil in a pan over medium heat. Fry the garlic briefly and then add the prosciutto and peas. Toss together and cook for a couple of minutes.
Add the sage to the pan, cooking until crispy.
Step 3. Add the pasta to the pan along with a splash of pasta water and a drizzle of olive oil. Grate a generous amount of parmesan over the top and toss through. Serve with fresh basil leaves and more parmesan.
Every Greek family has got a favourite but nobody can pick a winner, so instead, I have built both into one tray….this is the Pastitsio Moussaka, and it is delicious (hopefully the Greeks don’t hate me for this!)
I keep the velvety eggplant from the Moussaka, adding in the tubular pasta from the Pastitsio and tying it all together with a signature meat sauce!
