FISH, PEA & HERB ORZO
Fish, Pea & Herb Orzo - for those days when it is still hot outside but you feel like something, cosy, comforting and all cooked in one pan! Creamy orzo, zesty fish, it’s bright, balanced and absolute perfection.
2 cloves garlic, finely sliced
1 small leek, halved, finely sliced (washed if sandy)
1 tbs olive oil
1 cup orzo
1/4 cup finely chopped parsley
1/4 cup finely chopped mint
1/2 cup frozen peas
2 cups chicken stock
5 thin slices of lemon
400g fresh white flesh fish (something nice and chunky), cut into finger width pieces
To serve
Lemon squeeze
Olive oil
Sour cream
Crumbled fetta
Fresh dill
Step 1. In a large heavy based skillet saute garlic and leek in olive oil until softened. Add orzo, herbs and peas. Add chicken stock and stir to combine.
Step 2. Place lemon slices and top with pieces of fish. Cover and cook until fish is done to your liking and orzo is al dente!
