SMOKEY SAUSAGE AND EGG BREAKFAST MUFFIN
Everybody loves a good breakfast muffin. This version takes a simple, flavourful sausage and adds a twist of smoke and spice to take your muffin to the next level --> better than Maccas!

Ingredients
4 English muffins, toasted and buttered
4 Italian pork sausages (sweet or spicy)
2 tsp smoked paprika
1 tsp chilli flakes (optional)
2 tsp butter
2 ripe medium tomatoes, cut into thick slices
4 eggs
4 slices burger cheese
40g rocket leaves
Method
Step 1. Remove the sausage meat from the skins and place in a bowl. Add the smoked paprika and chilli flakes and mix with your hands to combine evenly. Form 4 even, thin patties and set aside on a tray. \
Step 2. Heat a little oil in a frypan and cook the patties for around 3 minutes each side or until golden. Drain on some paper towel.
Step 3. Return the pan to the heat with a little more oil and a knob of butter. Fry the tomatoes until golden and tender and season with salt and pepper. Then, fry the eggs sunny side up until crispy on the bottom and until the whites on top are just cooked. Season with salt and pepper.
Step 4. To assemble, place the patty on the base of the muffin and top with cheese followed by tomato, rocket and an egg.
