SMASH BURGER WITH BACON JALAPENO MAYO
I love a burger (as you can probably see from all the different burger recipes on this site), but this one is taking the cake for me at the moment and I think it has a lot to do with the crazy bacon jalapeno sauce and those slightly charred onions.
Burger
450g good quality beef mince (or 4 burger patties)
Salt, to season
8 sliced burger cheese
3 brown onions, sliced
2 soft brioche or potato burger buns, lightly toasted
Bacon Jalapeno Mayo
200g streaky bacon, cut into strips
1/2 cup sliced jarred jalapenos, chopped
1/2 cup sour cream
1/2 cup mayo
1 tbs tomato sauce
1 tbs yellow mustard
1/2 tbs apple cider vinegar
2 tsp smoked paprika
2 tsp garlic powder
Salt and pepper, to taste
Step 1. Make your burger patties. Season beef mince with salt and pepper and then shape into four even patties. Place on a lined tray and cover with cling film and place in fridge until ready to cook. These can be made ahead of time.
Step 2. Start by cooking off your onions first, there are two ways you can go about this: hard and fast, or slow and caramelised. The hard and fast gives you little burnt crispy bits and the slow version is all about low heat and rich caramelisation. Now I love both, but sometimes it comes down to time, to get really good caramelised onions it takes time. For the hard and fast method I use the BBQ or a cast iron, for the caramelised you can use a small saucepan and cook down gently in butter.
Step 3. While the onions are cooking, fry off the bacon until nice and crispy and fat has rendered out. Once cooked, remove to a plate with paper towel and begin mixing up your sauce adding all the ingredients to a bowel and mixing well to combine.
Step 4. Cook the patties. Do this on the flat plate of your BBQ or on a cast iron pan inside. The good thing about the BBQ is you should be able to cook all four at once, the pan will take a little more time management. The key with both methods is to get the cooking surface smoking hot and then use a meat press (or something heavy) to press the patties into the cooking surface as hard as you can so they get nice and flat and increase the surface area. Cook until super crispy, flip and add cheese slices.
Step 5. Butter your bun with the bacon jalapeno mayo, top with 2 x patties, add more mayo and then finally the onions, add the lid and enjoy!

The Choripan is something I can get my lips around a little more often I think (although the Bunnings Sanga / Surf Club Sausage Sizzle is still top dog!). We are lucky to have an Argentinian butchery close by to Studio Maybe so I could easily get my hands on some traditional Argentinian Chorizo (which is distinctly different to Spanish Chorizo) to make this street food classic.
This “Chinese Hamburger” is something that grabbed my attention online and I had to give it a crack. Tender meat, quickly stir fried in lots of spiced with a little green capsicum between two fresh buns and it was delicious. These 肉夹馍 would go perfectly with a cold beer!
I think the only thing that is missing on this burger is the bacon? How did I forget! Wrap your fangs around this Aussie classic, the Aussie Burger with the lot!
