SPICED RUMP STEAK SKEWERS
RECIPE DEVELOPED FOR CLEAVERS ORGANIC
I love food like this. All about sharing, cooking and eating with your hands, by the BBQ and very much ready to eat outside in the sunshine with a great group of friends! Packed full of flavour this is a great spiced salt mix that will work well on all red meat but particularly well with the rump steak in this recipe. Fire up the BBQ this weekend and enjoy.

Ingredients List
2 x packets Cleavers Organic Rump Steaks, cut into cubes
Spice Mix
1tbs salt
1tsp chili flakes
2 tsp coriander powder
2 tsp cumin powder
1 tbs smoked paprika
Tomato Salad
2 large heirloom tomatoes, cut into chunks
1/2 red onion, finely sliced
1 tsp dried oregano
Sea salt and freshly ground pepper to taste
2 tbs red wine vinegar
2 tbs extra virgin olive oil
Yoghurt Sauce
1 cup greek style yoghurt
1 tbs tahini
Squeeze half lemon
1 tbs olive oil
Sea salt and pepper to taste
To serve
Pita breads, warmed on BBQ
2 lebanese cucumbers, cut into batons
1 lemon, cut into wedges
Mint, roughly chopped
Coriander, roughly chopped
Parsley, roughly chopped
Step 1. Preheat your BBQ to high heat. Make your spice mix by combining all ingredients in a bowl.
Step 2. Prepare all the other ingredients and elements of the dish as you want to be ready to serve as soon as the skewers are done: make the tomato salad, prep the sauce and ensure all the serving items are ready to go.
Step 3. Thread the rump steak onto skewers (metal are best for the BBQ but wood works, just be sure to soak ahead of time to help prevent burning) and then season well with the spiced salt.
Step 4. Cook the skewers hard and fast, flipping frequently, they wont take long to cook. Place on a serving plate and allow to rest for a minute or two.
Step 5. Serve immediately with all the sides, sauces and salads. DIY and make your wrap your way! Enjoy.
