EGG SABICH SANDWICH

Ingredients
2 boiled eggs, cooled, peeled and chopped into quarters
1 small eggplant, sliced into 1cm rounds
2 Roma tomatoes, roughly chopped
1 Lebanese cucumber, roughly chopped
1/4 red onion, finely sliced
Pickled peppers, sliced
1/4 lemon
Hummus
2 pita breads, cut in half
Method
Step 1. Heat 3 tablespoons of oil in a frypan and fry the eggplant until brown on both sides. Season with salt and set aside.
Step 2. Toss together the tomato, cucumber, onion and pickled peppers in a small bowl and season with salt, pepper and lemon to taste.
Step 3. Spread hummus generously into each pita pocket and fill with eggplant, salad and the boiled eggs.
The Choripan is something I can get my lips around a little more often I think (although the Bunnings Sanga / Surf Club Sausage Sizzle is still top dog!). We are lucky to have an Argentinian butchery close by to Studio Maybe so I could easily get my hands on some traditional Argentinian Chorizo (which is distinctly different to Spanish Chorizo) to make this street food classic.
