PAO DE QUEIJO
The Pão de Queijo is the most delicious Brazilian Cheese Balls.
Best eaten HOT!
500g Sweet Tapioca Flour*
500g Sour Tapioca Flour *
Salt, to taste
350g Milk
1 cup Vegetable Oil
4 Whole Eggs
200g Smooth Ricotta
300g Parmesan, grated
300g Cheddar, grated
Step 1. Pre-heat oven to 200C. Mix together the dry ingredients; tapioca flours and salt.
Step 2. Next add the wet ingredients; milk, oil, eggs and ricotta into the flours and mix well with your hands to combine and the flour is fully hydrated.
Step 3. Fold through the cheeses ensuring they are well distributed through the dough.
Step 4. Roll into golf balls sized balls and place on a lined baking tray and bake for 25-30mins or until golden. The aim is to have a nice crispy golden outer crust and an chewy cheesey inside that is something like a mochi texture! Best enjoyed HOT!
Notes:
If you can’t find the “sweet” and “sour” tapioca flour then just use the tapioca flour / starch you find in most large supermarkets or Asian grocers.
