GREEN CURRY CHICKEN WINGS
A zesty chicken wing recipe that’s great for any day of the week and an excellent way to use up those last bits of curry paste in the fridge.

Ingredients
1kg chicken wings
1 Tbsp Thai green curry paste*
1 Tbsp vegetable oil
1 Tbsp brown sugar
3 Tbsp fish sauce
1/4 cup coconut milk
Zest and juice of 1 lime
1 long red chilli, sliced
1 small handful fresh mint leaves
1 small handful fresh coriander leaves
Yoghurt dipping sauce
1/2 cup natural yoghurt
1/4 cup coconut milk
1 tsp ginger, minced
1 Tbsp fresh mint, finely chopped
1 Tbsp fresh coriander, finely chopped
Method
Step 1. Preheat the oven to 180C. Place the chicken wings in a roasting pan add the curry paste, oil, brown sugar, fish sauce and lime zest. Mix to coat evenly and bake for 30-40 minutes or until golden.
Step 2. To make the yoghurt dipping sauce, combine all of the ingredients in a bowl, set aside until ready to serve.
Step 3. When the wings are done, squeeze some lime juice over the top, garnish with the chilli and fresh herbs.
Notes: * store bought curry paste is perfect for this.
