WHAT'S IN IT?
3 large chicken breasts
3 whole eggs, whisked
1 cup flour
2 cups panko bread crumbs (you can use regular breadcrumbs if you like)
salt, to taste
1/2 cup vegetable oil
PUTTING IT ALL TOGETHER:
1. Pound out chicken breast between two sheets of baking paper to 1 cm thickness.
2. Dredge chicken through flour, then into the egg and finally the breadcrumbs.
3. Over a high heat, heat oil in a large nonstick fry pan. Test oil temperature by placing the end of a wooden spoon into the oil, if it bubbles it is ready.
4. Cook chicken in batches until golden and cooked through. Place in oven to keep warm until ready to eat as you cook the remaining chicken.
